At Chardys we mature all our sauces in oak casks, and source easy. We age all our sauces in oak casks which have previously been used to mature fine Scottish malt whiskey. Secondary fermentation and maturation takes place in oak casks for 3 months which bring fine structured tannins and a touch of vanilla.
